Lemon Chicken

Ingredients Chicken ½ kg (cut into strips) Garlic Paste 1 tsp Ghee 2-3 tbsp Onion 1 (thinly sliced) Salt To taste Brown Sugar 1 tsp Oregano ½ tsp B. Pepper 1 tsp Lemon Zest 3 lemons Lemon Juice ½ cup Capsicum 1 Green Chili 1-2 Water 1 cup Corn Flour 3-4 tbsp Method Add ghee to a deep pan, wait till it's hot and add the garlic paste. Fry until golden, then add the chicken. Fry till it starts turning opaque, then add the salt, pepper, oregano, brown sugar, lemon zest, and half of the onion (keep the other half for later). Add half the capsicum and all of the green chilies, cover and cook for 5 minutes. Then add the water to the chicken, turning the heat up high. Boneless Malai Tikka Masala

So, I used mutton in this recipe instead of chicken (which is used in the original recipe over here ). If you want to make this with chicken then you'll have to vary the amount of spices used since they tend to overpower the bland chicken meat. I like my tikka masala full of flavor and if you prefer a milder version then please adjust the spices according to your taste. Ingredients For Marinade Boneless Mutton Pieces 1 kg Yogurt ½ cup Cream 3-4 tbsp Garlic Paste Of 5 cloves Ginger Powder ½ tsp Tikka Masala 3-4 tbsp Red Chilli Powder 1 – 1½ tsp Paprika ½ tsp Garam Masala ½ tsp Cumin 1 tbsp (ground) Salt 1 tsp Lemon Juice Of 3 lemons Ghee/ Butter 1-2 tbsp (melted) For Sauce/Gravy Ghee/ Butter

Moroccan Chicken Salad with Chickpeas and Apricots

Recipe adapted from Annie's Eats . Ingredients Chicken Breast Cooked Chickpeas Onion Dried Apricots Lettuce/ Iceberg Almonds Lemon Juice Honey 1-2 1 cup 1 (sliced thinly) ½ cup (coarsely chopped) As needed (torn into 1 inch pieces) ¼ cup (toasted and roughly chopped) 4-5 lemons ½ tsp Coriander Seeds ½ tsp (ground) Paprika ¼ tsp Salt Black Pepper ¼ tsp ¼ tsp Extra Virgin Olive Oil ½ cup Parsley/ Coriander 2 tbsp (minced) Method Thinly slice the chicken breast into even slices and liberally sprinkle with salt and pepper on both sides. In a grill or frying pan, add 1 tbsp of the olive oil, wait till it's shimmering and then add the chicken. Don't flip immediately, let it brown from one side and then turn over to the other. Moroccan Sauce

Ingredients: Lemon Juice ¼ cup Garlic 1 clove (crushed) Cumin ½ tsp (ground) Paprika ¼ tsp Red Chili Flakes A pinch Salt ¼ tsp Extra Virgin Olive Oil 2 tsp Parsley/ Coriander 2 tbsp (minced) Method: In a bowl, whisk the lemon juice, garlic, cumin, paprika, chili flakes and salt together. Gradually start whisking in the oil, little by little. Stir in the parsley or coriander. Serve at room temperature. - Great with all kinds of white and red meat. Can also be used as salad dressing. 

Rich Chocolate Bread Pudding

Ingredients Bread Slices (preferably 2-3 days old) 6-7 (cubed) Milk 2 cups Semi sweet chocolate/ chocolate chips (optional) ½ cup Sugar ½ cup Unsweetened Cocoa Powder ½ cup Eggs 2 Salt ¼ tsp Vanilla Extract 1-2 drops Method Preheat oven to 150 ÂșC. Slice the crusts off the bread and cup up into cubes.  In a large saucepan, whisk together milk, eggs and sugar until warm. Make sure the heat is low. Add in the chocolate or chocolate chips and cocoa. Mix until it melts and is incorporated in the custard. Turn off the heat, add in salt and vanilla.  Place the bread cubes in a lightly greased oven-proof dish. Pour chocolate custard evenly over the bread until it is all soaked in properly. Make sure all the bread is covered with the chocolate.  Bake the pudding for around 35-40 mins or until you feel it's done. Serve hot with ice cream!

Egg & Cheese Lasagna.

Ingredients Eggs 4 (boiled) White sauce 1-2 cups Salt and pepper To taste Cheddar cheese As needed Mozzarella cheese As needed Lasagna strips As needed Thyme A pinch Rosemary leaves A pinch Oregano ¼ tsp Method First, boil the lasagna strips and set them aside (run cold water on them after draining; they won't stick together). Spread a light layer of the sauce on the bottom of the dish you plan to use in the oven. Then start building the layers: first the lasagna strips, then the sauce, the eggs, the two cheeses, black pepper and finally the herbs. Pizza Topped Bread.

I want a special breakfast on Sundays. No exceptions, every Sunday has to have a special breakfast. It's a weekend, you deserve a good meal and so do I. When you live in an area (like mine) which has absolutely horrible naan chanay, nihari, parathas and halwa puri (weep), you have to rely on your own cooking skills. You're starving, you need good food and you need it NOW. So.
